black forest


this is the new macaron. i wanted to capture the flavors of a black forest cake. chocolate cherry ganache with almond macaron cookies. flavors for these are so endless. the most difficult part is that subtlety does not work here. flavors need to be bold. such a small bite.

I had a question about the proper name for these tasty little treats. Are they called macarons or macaroons?

pierre herme calls them macaron. that is good enough for me. i believe they became macaroons when they came to america. don't know why. thanks.
