last week our baker broke her foot. i have been filling in on weekends doing bread. it has been hectic no doubt. for one thing, i am not at all a great baker, i just know a few things on how it gets done. it really is all about doing it everyday and the consistency you obtain in that function. does the dough feel right, is there enough steam in the oven. every day i learn something new and make another mistake. i really enjoy it but also know it's not my thing. been simultaneously working on some new dishes. tomorrow is september. it's a very busy month for me. we will see how much i can get done.
