here are the desserts i did for thanksgiving today. since we do 3 turns during this service, i try to make the dishes a little more simple to execute. 
pumpkin ice cream, warm marshmallow cream with meyer lemon, raisins, speculoos streusel, speculoos croquant

walnut financier, apple butter, apple cider ice cream, sliced apples, candied walnuts

milk chocolate pudding, cranberries poached in honey and banyuls vinegar, blis maple syrup, maple meringues, and a "streusel" made of ground cookie crumbs, cocoa paper, and Valrhona chocolate pearls.  went great with the banyuls wine that was poured with it.

the staff meal after service was the real highlight though.
