foie macaron


i made these while the chef was off. they are for him though. maybe a substitute for gougeres as an introduction to the meal. i used some foie blonde he had, added a little almond flour to thicken, and sandwiched this filling between two macaron cookies sprinkled with pink peppercorn skins.
