rice pudding

here is a shot of the rice pudding dish that is currently on the menu. this was done for a tasting menu so it's a little smaller than usual. i prefer it better that way. just enough to get the flavors there than move on to the next dish.

rice pudding, compressed rhubard dice, rhubarb gelee, juniper gel, rhubarb sorbet, rhubarb foam, assorted flowers and herbs.
