Randall, our sous chef, came in the other night with some family. i sent out four courses.
tangerine sorbet, coconut cream, lime-basil seeds, and lemongrass soda poured tableside. grapefruit parfait, pistachio cake, frozen chocolate powder. apple marmalade, bay leaf ice cream, bostock pieces, applewood bacon powder. for the chocolate i sent out two different plates. chocolate pudding, banana sable, banana ice cream, and candied yuzu. the other was milk chocolate-passion fruit ice cream, chocolate microwave cake, passion fruit coulis, and compressed pears. too busy to get a picture of the last one. makes me want to do more microwave cakes, they are so tender.
