i have been wanting to do a butterscotch pudding for awhile now. finally it comes out. a simple dish really. butterscotch pudding (made using a traditional cornstarch method), compressed cherries, coffee gel, various herbs, tonka bean ice cream, and some Valrhona crunchy pearls. the pudding is set in a glass which makes it look like a terrarium. i like that.
